Recipes from around the world (Egypt)

Baba Ghanoush

serves 4-6
1 large eggplant
2 garlic cloves 
2 tbsp tahini
1tbsp olive oil
juice of 1 lemon
salt and pepper to taste

grill the eggplant until the skin bubbles, brown on both sides
(if in the oven 400 degrees should do the trick)
halve the eggplant and scoop flesh into food processor
Add the garlic, tahini, olive oil, salt and pepper and lemon juice (blend until smooth)

Serve with flat bread
