two of my favorite words....and gifts.

There are two things (excluding people) that always bring a huge smile to my face. 

Balloons and Marshmallows 

A few years ago my sister surprised me with one of the best gifts ever. She had balloons delivered to my workplace....not just any balloons but  Balloons on Broadway
It hardly fit through my office door. 
There were balloons inside balloons, swirly, sparkly, GIANT and one's shaped like flowers. Smile worthy. Thanks sis if you ever read this. It was a while back but I still remember it. 

Me, the late Mr. Echo and my sister's balloons and flowers (3 years ago)....I wish the camera was pointed up...because there are about 10 balloons not in the pic.




Marshmallow....my all time favorite word, feel, smell and taste.
Say it with me....marshmallow...mmmmm.

A little movie called "waitress" sent me into a cooking frenzy with her marshmallow mermaid pie. 




Here is the recipe 

9 graham crackers
1/2 cup sweetened toasted coconut
5 tbsp butter or margarine
8 oz. large marshmallows and  some small ones to decorate the top with
1/2 cup whole milk
1 1/2 cup heavy whipping cream
1 oz unsweetened chocolate, grated

Preheat oven 375
Combine coconut and graham cracker in food processor until crumb like
Combine crumbs and butter with a fork
Press into a pie plate and bake for about 10 minutes...let cool

Heat marshmallows and milk over low heat until smooth, stirring constantly
Remove from saucepan and cool completely (about 30 minutes).

In a large bowl with mixer at medium speed, beat cream until stiff peaks form.
Fold marshmallow mixture into whipped cream with chocolate.
Spoon filling into pie crust.  Refrigerate for 3 hours.

Decorate with mini marshmallows and cherries.
